Cassata is a traditional Sicilian dessert: a round sponge cake filled with sweetened ricotta mixed with liqueur, chocolate chips and candied fruit, then iced and decorated with candied fruit and almond paste.


How To

To make a cassata properly, it should be prepared in the traditional slightly flared mold that is lined with slices of sponge cake, filled and allowed to rest in the refrigerator for a few hours. Then it is taken out of the mold and turned over. Only at this point can it be decorated with icing, candied fruit and almond paste.
